Roasted Peppers
Ingredients
4-6 MULTI COLORED BELL PEPPERS
OLIVE OIL
SALT
PEPPER
Instructions
Place peppers in a pie pan and roast in oven on 350-375 degrees.
As skin darkens, turn to new side and repeat process until all sides are “blackened.”
Remove peppers from heat and let stand/cool for awhile.
Once cool, remove peppers from pan and keep juice in pan, set aside.
Begin to peel cooked skin off of peppers until you have flesh, remove seeds.
Cut or tear pepper flesh into strips and place in a large bowl.
Repeat this process until all peppers are prepared. No pour in olive oil until peppers are saturated.
Add the juice from cooking the peppers.
Add salt and pepper to your taste. Stir.
Peppers are best when placed atop a good Italian bread or focaccia.
