Nana’s Sicilian Meatballs
Ingredients
2 LB GROUND CHUCK
2 C. ITALIAN STYLE BREADCRUMBS
1 C. GRATED PARMESAN CHEESE
3 EGGS
2 T. MINCED GARLIC
1 T. GROUND FENNEL
Instructions
Throw all of the ingredients in a bowl (of course crack the eggs and discard the shell) and mix and squish with your clean hands. If too dry, add egg. If too wet, add breadcrumbs and parmesan 2:1 ratio.
Form meatballs to whatever size you like! You can cook on the stovetop in a frying pan or on a baking sheet in the oven.
If you are pairing with a tomato sauce, cook about halfway done and add meatballs to the sauce to finish cooking. Otherwise, cook completely, or at least “medium well” and serve.
