Shrimp Fra Diavolo
Ingredients
1 LB MED-LARGE SHRIMP, PEELED AND DEVEINED
4 ANCHOVY FILLETS, CHOPPED
2 T. CRUSHED RED PEPPER
½ C. DRY WHITE WINE OR DRY RED/CABERNET
1 JAR OF CHEFMEL’S SWEET SICILIAN PASTA SAUCE
16 OZ CRUSHED TOMATOES, SAN MARZANO PREFERRED
8-12 OZ COOKED LINGUINE OR BUCATINI
1 T. OLIVE OIL
Instructions
Heat 1 T. Olive oil in a large skillet and add shrimp to sauté 1 min each side.
Set aside.
Start boiling water in a pot for the pasta.
In a Dutch oven or large pot/pan, add pasta sauce, crushed tomatoes, anchovies, white wine and crushed red pepper and simmer 15-20 minutes.
While the sauce is simmering, add pasta to boiling water and boil for 10 minutes.
Drain pasta.
Add shrimp and pasta to the simmering sauce and stir/fold in.
Serve.
