Italian Potatoes
Ingredients
2 DOZEN MULTI COLORED PETITE POTATOES
2 T. EXTRA VIRGIN OLIVE OIL
1 T. EXTRA COURSE SEA SALT
1 T. FRESH CHOPPED FLAT LEAF PARSLEY
1 T. DRIED BASIL
1 T. DRIED THYME
1 ½ T. GROUND FENNEL
Instructions
Boil or steam potatoes until semi soft.
Rinse potatoes with cool water.
Partially smash potatoes with your hand.
Place oil in pan, heat and add garlic and stir 1-2 minutes.
Add potatoes and brown both sides.
Add seasonings to your desired amount and continue to stir in pan.
Serve.
