Cranberry Orange Biscotti
Ingredients
2/3 C. SUGAR
½ C. OLIVE OIL
1 ½ T. ORANGE ZEST
1 ½ T. VANILLA
3 EGGS
2 ½ C. FLOUR
1 C. DRIED CRANBERRIES
1 T. BAKING SODA
1 T. BAKING POWDER
¼ T. SALT
Instructions
In a large bowl or stand mixer, blend sugar, olive oil, orange zest, vanilla and eggs.
Mix in the flour, baking powder, baking soda and salt
Shape dough into a 10” x 3” rectangle using wax paper.
Remove wax paper and place on parchment paper lined cookie sheet.
Bake at 350 degrees for 25-30 minutes, or until a toothpick comes out clean.
Let cool on cookie sheet 15 minutes.
Cut ½ inch slices at an angle and place cut side down on cookie sheet.
Bake for 15 minutes, turning ONCE, they should be a very light golden brown.
Let cool.
*Optional - You can melt chocolate and drizzle over biscotti or dip one half of biscotti in chocolate and place on wax paper and refrigerate for a few hours.
